I used to think that the only way to make green beans was to boil them to death with a lovely ham hock. And while that is a hugely delicious way to eat green beans, there is also (at least) one other way that is amazingly tasty and doesn’t require water. (I read something about how boiling veggies really depletes their nutritional value, is this true?)
Roasted Green Beans
- 1 lb. fresh green beans, ends snapped off
- Extra virgin olive oil or flavored olive oil (a few drizzles will do)
- 3-4 cloves garlic, chopped
- Flaked sea salt (like this)
- Fresh ground pepper
- Grated parmesan cheese (optional)
Preheat oven to 375F. Spread the green beans out on a large cookie sheet, drizzle with extra virgin olive oil, add garlic and sprinkle with salt and pepper. Toss the green beans to make sure they are fully coated with the olive oil. Roast in the oven for 10-15 minutes or until beans are tender, but still slightly crisp.
