Did you guys see? I got a donut pan!!

I’ve had my eye on one for a while now and I finally found one on sale at Target. I scooped it up and the next day we had our first batch of hot, glorious, delicious, gluten free donuts. Since then I have been making a batch of mouth watering donuts every few days. I’m sure you’ve seen them on my Instagram account.

Side note: Did you know you can make so many things in a donut pan? Like muffins? You can take any old muffin recipe and bake them in a donut pan and you will get more muffin-top type muffins. You can get a ton of donut pan ideas from corner blog. Anyway, I have totally justified my purchase :)

I wanted to share the gluten free donuts recipes that I have been making.

The first one if from my new fave mini cooking show, Raw. Vegan. Not Gross. by Laura Miller. The show is on the Tastemade Apple TV app, and on YouTube. These donuts are not raw, but the are delicious! I dunked ours in some chocolate and then various toppings (the kids insisted I make some with jimmies), also made some of the jelly swirl kind with some no-sugar-added jam.

These ones are only gluten free because I used a cup for cup gluten free flour mixture (Cup4Cup brand), otherwise they are made with wheat flour. These were wonderful warm but got a little gummy (wouldn’t happen with wheat flour) after they cooled off. And really it was a very slight gummy-ness.

You guys, Brittany Angell is amazing! I salivate over her recipes and photos all the time. I want her cook book, Every Last Crumb so badly! She is a paleo baking genius.

I had a bunch of fresh strawberries that needed to be eaten, so I added about 1/2 a cups worth of chopped strawberries to the batter. It added a lot of strawberry flavor, but the recipe would be great without them too.

These I went a little topping-crazy with:

  • I dipped some in melted chocolate added fresh strawberries
  • I brushed some with melted butter and then sprinkled with cinnamon-sugar
  • I whipped some coconut cream and folded in some chopped fresh strawberries then spread the mix on the donuts
  • I crushed some freeze-dried strawberries and sprinkled them on some donuts that I brushed with melted butter

Well that’s all I got this time folks. I’ll let you know if I try any other gluten free donut recipes.
